Home-made Green Pesto

Home-made pesto is not only a delicious and versatile addition to any meal but also a healthier alternative to store-bought versions. By making it at home, you can control the ingredients, ensuring it is free from preservatives and unnecessary additives. Fresh herbs like basil, combined with nutrient-rich olive oil, garlic, and pumpkin seeds, offer a boost of antioxidants, healthy fats, and essential vitamins. Ingredients
  • 60 g pack wild rocket
  • 20 g pack fresh basil
  • 4 tablespoons pumpkin seeds
  • 1 garlic clove
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt to taste
  • 30 g shaved or grated parmesan cheese

Instructions
  1. Heat a dry frying pan over medium heat. Add the pumpkin seeds and toast them until they begin to pop, stirring occasionally to prevent burning. This should take about 2-3 minutes.
  2. Once the pumpkin seeds are toasted, transfer them to a blender. Add the wild rocket, fresh basil, garlic, lemon juice, olive oil, and parmesan cheese to the blender as well.
  3. Blend all the ingredients together until you achieve a smooth, creamy pesto consistency. You may need to scrape down the sides of the blender a few times to ensure everything is well combined.
  4. If the pesto is too thick for your liking, add a little more olive oil or lemon juice to loosen it up. Blend again until you reach your desired consistency.
  5. Taste the pesto and adjust the seasoning with a pinch of salt, if needed. Blend again briefly to combine the seasoning.

Transfer the pesto to an airtight container and store it in the fridge. It will keep for up to 3 days. This home-made pesto is great for pasta, drizzling over vegetables, spreading on toast, or even using as a dip. Enjoy the fresh, zesty flavours!
