With roasted chicken (or tofu if you prefer a vegetarian option), quinoa, chickpeas, creamy avocado, and a boost of roasted sweet potatoes, this meal supports steady energy, gut health, and muscle maintenance. And it is absolutely delicious.
Ingredients – Serves 1
- ✓1/4 cup uncooked quinoa
- ✓1/4 cup cooked chickpeas, rinsed and drained
- ✓100g chicken breast, cut into small chunks
- ✓1/2 medium sweet potato, peeled and cubed
- ✓1/4 avocado, sliced
- ✓1 handful baby spinach
- ✓4 cherry tomatoes, halved
- ✓1 tsp pumpkin seeds
- ✓1 tsp crumbled feta cheese
- ✓1/2 tbsp olive oil (for roasting)
- ✓1 tbsp olive oil (for dressing)
- ✓1/2 tsp tahini
- ✓Juice of 1/2 lemon
- ✓1/2 tsp Dijon mustard
- ✓ Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (400°F). Spread the sweet potato cubes and chicken chunks evenly on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes or until potatoes are golden brown and soft and the chicken is cooked through.
- While the sweet potato is roasting, cook the quinoa according to package instructions.
- For the dressing, whisk together olive oil, tahini, lemon juice, and Dijon mustard in a small bowl, and adjust seasoning as needed.
- Once the sweet potato, quinoa, and chicken are done, start assembling your bowl. Layer baby spinach as the base. Add quinoa, chickpeas, chicken, sweet potatoes, cherry tomatoes, and avocado.
- Sprinkle with pumpkin seeds and feta cheese.
- Drizzle with the dressing and toss lightly. Enjoy!

For a plant-based alternative, simply substitute the roasted chicken breast with firm tofu. Press the tofu to remove excess moisture, then cut it into cubes or slices. Toss it in olive oil, salt, and pepper, and roast it alongside the sweet potatoes for a delicious, protein-packed option that perfectly complements the other ingredients.
